Brown sugar boba recipe
Brown sugar fresh milk is mostly texture and timing: glossy pearls, dark syrup stripes, and cold milk. No espresso machine required.
At a glance
- 80 g quick-cook tapioca pearls
- 3 tbsp brown sugar syrup (boba-style, thick)
- 1 tbsp extra brown sugar for the stripe
- 150 ml whole milk or oat milk
- Ice
Syrup choice
Use syrup labelled for bubble tea. Pancake syrup is too thin and slides off the glass. Bottled black sugar syrup is the weeknight shortcut; melting slab sugar is the weekend project.
Temperature contrast
Warm pearls against cold milk is the point. If everything goes lukewarm, use more ice and chill the milk first.
