The pearl texture gets praise, but some note it doesn't quite match Vancouver. Calgary's Chinatown crowd is enthusiastic about having a premium brown sugar option.

Calgary's Xing Fu Tang brings the wok-stirred brown sugar show to Centre Street. The pearls don't hit quite the same stratospheric chew as the Vancouver flagship, but they're still head and shoulders above.
